Crunchy Walleye Fillets

  • Skillet
  • Small
  • 1 Egg
  • 1 Cup Evaporated milk
  • 2 Cups Cracker crumbs
  • 1/8 tsp Salt
  • 1/8 tsp Pepper
  • 1 1/2 lb Walleye fillets or any lean fish like Bass (Stripers, Perch)
  • 2-4 Tbsp Vegetable oil
  1. In a shallow dish, blend egg and milk
  2. Combine cracker crumbs, salt and pepper in a 2nd dish
  3. Cut fish into serving size pieces, dip in milk and coat with breadcrumbs
  4. Heat oil in a skillet
  5. Fry a few pieces of fish at a time until golden brown (Approx. 3 minutes)
  6. Dry on paper towel before serving
