Crunchy Walleye Fillets
- Skillet
- Small
- 1 Egg
- 1 Cup Evaporated milk
- 2 Cups Cracker crumbs
- 1/8 tsp Salt
- 1/8 tsp Pepper
- 1 1/2 lb Walleye fillets or any lean fish like Bass (Stripers, Perch)
- 2-4 Tbsp Vegetable oil
- In a shallow dish, blend egg and milk
- Combine cracker crumbs, salt and pepper in a 2nd dish
- Cut fish into serving size pieces, dip in milk and coat with breadcrumbs
- Heat oil in a skillet
- Fry a few pieces of fish at a time until golden brown (Approx. 3 minutes)
- Dry on paper towel before serving
